This autumn, we’re bringing the remote mountainside tastes of Western Mindanao, Philippines to Gadigal land. Join us on Saturday 18 April at Magenta House for Malindang: Tastes of Western Mindanao: a moreish and revitalising dining experience featuring home-cook and culinary teacher Kristina Nàray.

Histories come alive on the plate as Kristina presents soulful dishes that explore her family’s long lineage of farmers from the Malindang region across the Zamboanga peninsula. Indulge in flavours and cooking techniques that pay homage to her ancestors, who lived resourcefully off the land, harvesting coconut, rice, corn, and market vegetables. This includes the sacred home of the Subanen tribe, where her Lolo (grandfather) hails from.

Held under the night sky, this intimate dinner gathering celebrates and preserves the pre-colonial ways of mountainous probinsya (provincial) life, as well as other culinary traditions across Mindanao and the stories of migration from neighbouring lands–long before European and the American influences were introduced to mainstream Pinoy cuisines. Together, we’ll enjoy nine home-style dishes using seasonal and home grown produce, with a menu guided by sustainable, zero-waste practices. 

Currently based on Naarm, Kristina will present this feeding session on Eora for the first time, in collaboration with Magenta House. Limited seats offered due to the intimate nature of this gathering.

Notes:

Bios 🐣


Kristina Náray is a cook based on Naarm/Melbourne. She previously grew up on Darug/Western Sydney and on a grape and citrus farm in Millewa-Mallee region, Kulin/Victoria. She completed a Bachelor of Health Sciences majoring in Nutrition and Health Promotion, before working as a nutritionist, culinary teacher, and cook. She previously worked in the public and community health sectors for over 13 years.

Kristina’s mother grew up in the mountain regions of the Zamboanga peninsula, with mixed Subanen background, and historical ancestral lineage to the island of Bohol in Central Visayas from both her parents. Kristina’s father is ethnic Hungarian and comes from a farming family that cultivated grapes, sugarbeet, and seasonal produce in a country town called Gombos. Kristina is passionate about promoting Southern Philippines' foodways practices and stories through her culinary work for Malindang.
